DEFINITION

Rice syrup is s a malted grain syrup made from rice, which contains the sugars maltose, maltotriose, and glucose. Also called brown rice (malt) syrup or rice malt. Used as a sweetener. It is derived by steeping cooked rice starch with saccharifying enzymes to break down the starches, followed by straining off the liquid and reducing it by evaporative heating until the desired consistency is reached.
