DEFINITION

  • Edible cassava (Manihot esculenta Crantz) flour is the product prepared from dried cassava chips or paste by a pounding, grinding or milling process, followed by sifting to separate the fibre from the flour. In case of edible cassava flour prepared from bitter cassava (Manihot utilissima Pohl), detoxification is carried out by soaking the tubers in water for a few days, before they undergo drying in the form of whole, pounded tuber (paste) or in small pieces

  • La farine comestible de manioc (Manihot escalenta Crantz) est le produit obtenu à partir de flocons de manioc ou d’une pâte de manioc séché par procédé de pilage, mouture ou broyage, suivi d’un passage au tamis visant à séparer la fibre de la farine. Dans le cas de farine comestible de manioc préparée à partir de manioc amer (Manihot Utilissima Pohl), la détoxication s’effectue en laissant tremper les tubercules dans l’au pendant plusieurs jours, avant de les faire sécher sous forme de tubercule entière, tubercule pilée (pâte) ou en morceaux

  • La yuca comestible (Manihot esculenta Crantz) es el producto que se obtiene de las hojuelas o pasta de yuca con un proceso de pulverización y molienda, seguido del cernido para separar la fibra de la harina. En el caso de la harina de yuca comestible preparada con la yuca amarga (Manihot utilissima Pohl), se efectuará la detoxificación remojando los tubérculos en agua por varios días antes de dejarlos secar en forma de tubérculo entero molido (pasta) o de trozos pequeños.
