DEFINITION
- Cheeses in brine are semi-hard to soft ripened cheeses in conformity with the General Standard for Cheese (CXS 283-1978). The body has a white to yellowish colour and a compact texture suitable for slicing, with none to few mechanical openings. The cheeses have no actual rind and have been ripened and preserved in brine until delivered to, or prepacked for, the consumer. Certain individual cheeses in brine contain specific herbs and spices as part of their identity. (en)

Les fromages en saumure sont des fromages affinés, de consistance ferme à molle, conformes aux
dispositions de la Norme générale pour le fromage (CXS 283-1978). La pâte présente une coloration blanche à jaunâtre et une texture compacte se prêtant au découpage, et elle est pratiquement exempte de perforations
mécaniques. Les fromages n’ont pas véritablement de croûte et ils ont été affinés et conservés en saumure jusqu’au moment de leur vente, ou de leur préemballage pour la vente au consommateur. Certains fromages en saumure contiennent des fines herbes et des épices qui font partie de leur identité.

Se entiende por quesos en salmuera los quesos madurados semilleros a blandos, que se ajustan a la Norma general para el queso (CXS 283-1978). Su pasta tiene un color de blanco a amarillento y una textura
compacta, idónea para ser cortada en rebanadas, que presenta pocas o ninguna cavidad de origen mecánico. Estos quesos no tienen una corteza propiamente dicha y se han madurado y conservado en salmuera hasta su entrega al consumidor o su prensando para la distribución. Determinados quesos en salmuera contienen hierbas aromáticas específicas y especias como parte de su identidad.
