DEFINITION

Edible starch derived from the rhizomes of any of several species of the genus Maranta, members of the family Marantaceae. The most commonly used species is Maranta arundinacea, the source of genuine, or West Indies, arrowroot. Also Florida arrowroot from Zamia integrifolia, and tapioca from cassava (Manihot esculenta) is often labeled arrowroot.
