Bira ve bazı alkollü içeceklerin üretiminde kullanılmak üzere arpa, buğday ve diğer bazı tahıl tohumlarının amilaz, proteaz, hemiselülaz gibi mayşelemede gerekli olan enzimleri üretebilmesi için kontrollü koşullar altında suda bekletilerek yumuşamasının ve çimlenmesinin ardından fırınlarda kurutularak filizlerinin ayrılması işlemi.
