تعريف

  • El emmental es un queso duro madurado de conformidad con la Norma general para el queso (CXS 283-1978). El cuerpo tiene un color que varía de marfil a amarillo claro o amarillo y una textura elástica pero no pegajosa que se puede rebanar, con agujeros ocasionados por el gas, de mate a brillantes, de distribución regular y de escasos a abundantes, de un tamaño que oscila entre cereza y nuez (desde 1 cm a 5 cm de diámetro) aceptándose unas pocas aberturas y grietas.

  • Emmental is a ripened hard cheese in conformity with the General Standard for Cheese (CXS 283-1978). The body has a ivory through to light yellow or yellow colour and an elastic, sliceable but not sticky texture, with regular, scarce to plentiful distributed, mat to brilliant, cherry to walnut sized (or mostly from 1 to 5 cm in diameter) gas holes, but few openings and splits are acceptable.

  • L’Emmental est un fromage affiné à pâte dure conformément à la Norme générale pour le fromage (CXS 283-1978). La pâte a une couleur allant du blanc cassé ou de l’ivoire au jaune pâle ou jaune et une texture élastique et tranchable mais pas collante, avec un nombre de trous de gaz réguliers, allant de rares à nombreux, de ternes à brillants, d’une taille variante entre celle d’une cerise et d’une noix, (ou principalement d’un diamètre allant de 1 à 5 cm) mais la présence de quelques ouvertures et fissures est acceptable.
