Edam is a ripened firm/semi-hard cheese in conformity with the General Standard for Cheese (CXS 283-1978). The body has a near white or ivory through to light yellow or yellow colour and a firm-textured (when pressed by thumb) texture, suitable for cutting, with few more or less round rice to pea sized (or mostly up to 10 mm in diameter) gas holes, distributed in a reasonable regular manner throughout the interior of the cheese, but few openings and splits are acceptable.

El edam es un queso firme/semiduro madurado de conformidad con la Norma general para el queso (CXS 283-1978). El cuerpo tiene un color que varía de casi blanco o marfil a amarillo claro o amarillo y una textura firme (al presionarse con el pulgar) que puede cortarse, con pocos agujeros ocasionados por el gas más o menos redondos de un tamaño que varía desde el de un grano de arroz a una arveja (guisante) (o hasta un diámetro de 10 mm) distribuidos de forma razonablemente regular por todo el interior del queso,
aunque se aceptan unas pocas aberturas y grietas.

L’Édam est un fromage affiné à pâte ferme/semi-dure conformément à la Norme générale pour le fromage (CXS 283-1978). La pâte a une couleur allant du blanc cassé ou de l’ivoire au jaune pâle ou jaune et une texture ferme (lorsqu’on appuie dessus avec le pouce), se prêtant à la coupe, avec peu de trous de gaz, plus ou moins arrondis, de la taille d’un grain de riz à celle d’un petit pois (ou principalement d’un diamètre allant jusqu’à 10 mm), dont la répartition est raisonnablement régulière dans tout l’intérieur du fromage, mais la présence de quelques ouvertures et fissures est acceptable.
